Garlicky Kale Whole Wheat Pizza




#1 reason why I just can't commit to a vegan diet is well....cheeeeeese. I love cheese seriously I could just marry it.. ok maybe not but really. I also love pizza and have you ever had vegan cheese? Yeah not the same...at all..just no.



I always have a batch of whole wheat pizza dough in the freezer for when my boyfriend and I have a serious pizza craving. It also just happens to be vegan! So you can omit the cheese for vegan cheese or other vegan friendly toppings. I am a crazy cheese fiend though so other than a great amount of mozzarella and parm on my pizza I also top it with my favorite garlicky kale which I put on top of everything! Quinoa bowls, baked sweet potatoes, rice or as a side dish its just soo good especially for those who don't like the taste of raw kale.

Protein Packed Quinoa Breakfast Bowl


I am not an oatmeal person at all I don't know... something about the texture (so mushy and soggy) has always turned me off. So this for me is a great alternative to a delicious warm bowl of healthy goodness in the morning. 

I literally have this 3 to 4 times a week it's THAT good and most importantly it's super fast to whip up! This is my go to breakfast when I don't have time on those busy mornings. 

To make mornings easier because I'm also not a morning person at all (You would think with all these breakfast recipes) I will usually make a big batch of quinoa every week so all I have to do is heat up a cup of quinoa and assemble the rest for an easy simple breakfast.

This quinoa breakfast bowl includes your own protein powder and delicious toppings for a super protein packed breakfast!

Vegan Peanut Butter Dog Treats




These dog treats are so simple to make and of course just happen to be vegan! They are a healthier alternative to what you will find at the grocery store and It's always good to know exactly what you're feeding to your furry friends. I adapted this recipe from vegan chef Chloe Coscarelli's amazing cook book "Chloe's Kitchen" My dog Paisley absolutely loves these peanut butter treats....proof in the picture below


Paisley is always right by my feet when I am baking these treats. I told you she absolutely loves these....look at those crazy eyes of pure joy!




     Vegan Peanut Butter Dog Treats

     Ingredients:
  • 2 cups of Whole wheat flour or chickpea flour for a grain free option
  • ½ cup water, plus extra as needed
  • ⅓ cup of creamy peanut butter, softened
  • 1 tablespoon blackstrap molasses

     1) In a medium bowl mix flour, water, peanut butter, and molasses until combined. 
         Add 1 or 2 more tablespoons of water so that the dough comes together and is moist. 

     2) Put the dough on a well floured surface (This stuff is really sticky!) and press with your    
         hands until the dough is about ¼ inch thick. 

     3) Use a cookie cutter of your choice and then place treats on a baking sheet. 
         These don't spread so placing them close together is no problem! 

     4) Bake treats for about 20 minutes. Turn off your oven and leave them in the oven to harden      
         for 30 minutes to an hour. 

     5) When cooled you can store these in a sealed container at room temperature for up to 2     
          weeks

     6) Feed them to your furry friends and hopefully they will have crazy eyes of pure joy like   
         Paisley has every time I open the treat jar!

Banana protein pancakes (Vegan)


On the weekdays I'm all about eating clean and getting as much protein and energy as I can for my workout later in the day....I know I know you are sitting there going "Why the hell did she call this food blog sweet paisley?" Well, I have a major sweet tooth and I absolutely love baking but when it comes to breakfast on the weekdays this is my go to "I really want pancakes" recipe. This is such a simple and delicious recipe which whips up in about 15 mins!



Bananan protein pancakes (vegan)

Vegan banana protein pancakes

Ingredients

  • 1 large banana mashed
  • 1 tsp. vanilla extract
  • 1 cup of milk of your choice (I use almond milk)
  • 1 cup all-purpose flour
  • One scoop of your own vanilla protein (You can also use ground flaxseed about 3 Tbs)
  • 1 tsp. baking powder
  • 1 tsp. baking soda
  • ¼ tsp. cinnamon 
  • 1 Tbsp. coconut oil
  • Top with some banana slices, chopped nuts, maple or agave syrup
1) First mash banana in a bowl with a spoon, fork or your hands and then add in vanilla extract and Milk of your choice.

2) In a separate bowl mix the dry ingredients flour, protein, baking powder, baking soda and cinnamon

3) Add the dry ingredients to the wet and mix until well combined.

4) Add coconut oil to pan on medium heat

5)  Add about 1/4 of the batter at a time to the pan. Start to flip the pancake on the other side when bubbles start to form (about 2 mins each side). 

6) Top with your favorite topping bananas, nuts, agave, cinnamon and enjoy!
